  • 200g Lion’s Mane mushrooms, chopped

  • 1 small onion, diced

  • 950ml vegetable broth

  • 120ml white wine 

  • 25g grated Parmesan cheese

  • 30g butter

  • Fresh parsley for garnish

Instructions

  1. Warm the vegetable broth over low heat in a saucepan.

  2. In a different pan, sauté onions and garlic in butter until translucent.

  3. Add the chopped mushrooms, cooking until they release moisture and brown slightly.

  4. Stir in the Arborio rice and cook for 1-2 minutes until slightly toasted.

Selection of Dried Pasta

Ingredients

  • 200g Lion’s Mane mushrooms, torn into strips

  • 200g fresh tagliatelle or fettuccine

  • 2 tbsp olive oil

  • 2 tbsp vegan butter (or regular butter)

  • 1 shallot, finely diced

  • 2 cloves garlic, minced

  • 60ml dry white wine

  • 1 tbsp truffle oil (plus extra for drizzling)

  • 1 tbsp nutritional yeast (or Parmesan for non-vegan)

  • Salt & black pepper to taste

  • Fresh parsley, chopped, for garnish

  • Toasted pine nuts for garnish

For the Cashew Cream

  • 100g raw cashews, soaked for 2 hours

  • 150ml water

  • 1 tbsp lemon juice

  • 1 tsp miso paste (adds umami)

  • ½ tsp Dijon mustard

  • Salt to taste

Instructions: Preparing the Cashew Cream

  1. Drain the soaked cashews and blend with water, lemon juice, miso paste, Dijon mustard, and salt until smooth and creamy.

  2. Set aside while you prepare the pasta.

  1. Heat olive oil and 1 tbsp of butter in a pan over medium heat.

  1. In the same pan, melt the remaining 1 tbsp butter and add the diced shallot. Sauté until softened, about 2 minutes.

  3. Pour in the white wine, letting it simmer for 1-2 minutes to reduce slightly.

  4. Stir in the cashew cream, nutritional yeast (or Parmesan), and truffle oil, mixing well. Adjust seasoning with salt and black pepper.

  1. In lightly salted water, cook the pasta until al dente. Reserve 50ml of pasta water, then drain the rest.

  2. Add the drained pasta to the pan with the sauce, tossing to coat. Add a splash of reserved pasta water to make the sauce silky and loose.

  3. Fold in the Sautéed Lion’s Mane mushrooms, ensuring they are well distributed.

Serving & Garnish

  1. Divide the pasta between two plates.

  2. Drizzle with extra truffle oil, sprinkle with fresh parsley, and top with toasted pine nuts for crunch.

  • Cooked – Keep in an airtight container in the fridge for 2-3 days.

  • Freezing - pre-slice steak cuts and blanch the slices, then store in zip-lock bags at -18°C for up to 12 months.

  • Dried – Store in an airtight container in a cool, dark place for maximum shelf life. You can rehydrate by soaking in warm water before use.
